Easy Peasy Pancake Recipe for Pancake Day!

You will need:

2 eggs
110g (4oz) sifted flour (works really well with wheat

flour or standard gluten free flour)
200ml (7fl oz) milk
75ml of water
Pinch of salt
A knob of melted butter
50g (2oz) of butter for coating the pan (if you have a great non-stick pan you don’t need this)

Whisk eggs, milk, water, flour, salted and melted butter into a smooth batter.

Heat the pan on medium heat.

Lift pan from heat and add 3-4 Tbsps of batter all at once, rotating and tilting the pan to coat the entire surface.

Cook until almost dry on top and lightly browned around the edges.

Loosen with spatula and serve!

I love cinnamon and sugar. (I use xylitol instread of sugar but its up to you!). Also popular is lemon and sugar OR

maple syrup.

Others like fillings like ham and cheese.
